Must Try Recipes of the Week

Welcome to the “Must Try Recipes” where we feature my 5 favorite recipes found on the web. This week I’ve found a healthy Mac & Cheese dish, 3 wonderful shrimp dishes, and a refreshing summer salad.
Starting out from Kristina at Love & Zest we have a wonderful Cauliflower Mac & Cheese made with gnocchi instead of macaroni. At 273 calories a serving it’s a healthy alternative to the traditional Mac & Cheese dish. The recipe can be found here: Cauliflower Mac & Cheese
Up next is a great looking garlic, butter, shrimp, and rice recipe. This comes from Katerina at DietHood. A very simple recipe that could be made much healthier by substituting the white minute rice for a good quality brown rice which would add more fiber. It will however increase the time it takes to prepare the dish. You could also substitute the butter for a good quality extra virgin olive oil. The recipe is found here: Garlic Butter Shrimp w/Rice
Our third offering comes from Olivia at PrimaveraKitchen. It’s a mouth watering Sweet Potato Kale and Shrimp Skillet. With a total prep time of only 30 minutes, and seasoned with onion, garlic, and a dash of red pepper flakes sauteed in olive oil it’s a tasty yet healthy dish sure to please. Rounding out our shrimp offerings this recipe come from Chef John via AllRecipes.com It doesn’t get much simpler than this. With a similar seasonings line up as the recipe above with the exception of the capers this could make for a wonderful recipe to prepare then chill and add to a mixed green salad for a healthy greens and protein dish. Last but not least is one of my all time favorite summer treats, Cucumber, Tomato, and Onion salad. This version comes to you from Kaitlin at the Garden Grazer. The recipe calls for the main ingredients along with a dash of oregano, salt and white wine vinegar. Personally I’d add a good amount of fresh ground black pepper.
